A Taste of History by A Chicago Private Chef

Rijsttafel, or "rice table," has roots that reach back to the Dutch colonial period in Indonesia. Originally conceived as a way to showcase the abundance and diversity of Indonesian cuisine, the Rijsttafel was often a lavish affair with multiple dishes served family-style, accompanied by elaborate garnishes and proudly presented by a parade of servers. It became a symbol of sophistication, where the richness of culture and culinary craft came together at the table.

Today, this tradition lives on in select restaurants in the Netherlands and Indonesia, but few in the United States have had the opportunity to experience its depth and vibrancy.

A Signature Private Chef Experience in Chicago

My approach to the Rijsttafel was born during my time running de Quay, my namesake restaurant in Chicago from 2014 to 2018. Each Monday night became known as Rijsttafel Night, drawing in curious food lovers and media attention alike. It was one of the most meaningful chapters of my career and now, it lives on through my private chef services.

As one of the only chefs in the U.S. crafting this experience, I’ve reimagined Rijsttafel for today’s private dining setting. Whether you’re hosting a cocktail-style gathering, a formal multi-course dinner, or a small buffet with chef-attended stations, Rijsttafel offers an extraordinary opportunity to explore Dutch and Indonesian cuisine in a way that is deeply personal, expertly prepared, and beautifully presented.

What to Expect at The Rijsttafel Chicago Dining Experience

Every Rijsttafel I create is completely unique, tailored to the season and inspired by both traditional recipes and my own culinary interpretations. Some dishes, like my Chicken Satay with Spicy Peanut Sauce or signature Nasi Goreng Fried Rice, make frequent appearances due to popular demand. Others like Balinese Coconut Curry Mussel Bisque, Kecap Manis-Braised Pork Belly, or Pandan Mango Crèmeux may surprise and delight your guests with flavors they’ve never experienced before.

Expect a richly layered dining experience filled with warmth, attentive service, and dishes that feel both nostalgic and adventurous. A Rijsttafel is more than a dinner. In fact, many of my guests have told me it felt like they were transported to Amsterdam or Bali for the evening all without leaving Chicago.

Pop-Up Dinners and Private Events in Chicago

On select occasions, I host ticketed Rijsttafel dinners at my private space on the north side of Chicago. These pop-up events are a great opportunity to experience this style of dining in an intimate, curated setting. This year, I’m excited to share that I’ll be hosting two Rijsttafel pop-ups including a festive “Sinterklaas” edition that celebrates holiday flavors with a Dutch-Indonesian twist.
